👩‍🍳 Instructions

1. Make the crust:

  • Mix flour and salt. Cut in cold butter until pea-sized crumbs form.
  • Gradually add ice water until dough comes together.
  • Divide into two discs, wrap in plastic, and chill 1 hour.

2. Prepare the filling:

  • In a bowl, toss sliced apples with lemon juice, sugars, spices, and flour/cornstarch.

3. Assemble the pie:

  • Roll out one dough disc and line a 9-inch pie plate.
  • Fill with apple mixture and dot with butter.
  • Roll out second disc and place over top. Trim, crimp edges, and cut vents.
  • Brush with egg wash and sprinkle sugar (optional).

4. Bake:

  • Bake at 400°F (200°C) for 20 minutes.
  • Reduce to 375°F (190°C) and bake another 35–45 minutes until golden and bubbly.
  • Cool at least 2 hours before serving.
