Instructions
1. Make the crust:
- Mix flour and salt. Cut in cold butter until pea-sized crumbs form.
- Gradually add ice water until dough comes together.
- Divide into two discs, wrap in plastic, and chill 1 hour.
2. Prepare the filling:
- In a bowl, toss sliced apples with lemon juice, sugars, spices, and flour/cornstarch.
3. Assemble the pie:
- Roll out one dough disc and line a 9-inch pie plate.
- Fill with apple mixture and dot with butter.
- Roll out second disc and place over top. Trim, crimp edges, and cut vents.
- Brush with egg wash and sprinkle sugar (optional).
4. Bake:
- Bake at 400°F (200°C) for 20 minutes.
- Reduce to 375°F (190°C) and bake another 35–45 minutes until golden and bubbly.
- Cool at least 2 hours before serving.
