CHEESE CHICKEN FRITTERS

Instructions:
Place the chicken breasts on a cutting board and, using a sharp knife, cut them into bite-sized pieces. Place them in a large bowl.
In the large bowl, add the almond flour, eggs, mozzarella, basil, chives, parsley, garlic powder, salt, and pepper. Mix well to combine.

Heat the oil in a large nonstick skillet over medium-low heat. Using an ice cream scoop or a large spoon, scoop the chicken mixture into the skillet, then flatten it slightly to form a pancake. Don't overcrowd the pan; cook the pancakes in batches, about 4 per serving.
Fry until golden brown on both sides, about 6-8 minutes. Keep in mind that you need to cook them at medium-low heat, otherwise they will burn on the outside but not cook through.
Serve with your favorite sauce.
