Creamy slow cooker soup

Instructions
Step 1: Prep the ingredients:
Start by washing, peeling, and chopping all the vegetables. Prep is quick, and once everything is ready, the slow cooker will do the heavy lifting for you.

Step 2: Brown the chicken (optional, but adds flavor).
Heat the olive oil (or butter) in a skillet over medium heat.
Season the chicken with salt and pepper, then brown it for 2-3 minutes per side, until lightly browned.
Once browned, transfer the chicken to the slow cooker.

Step 3: Add the Vegetables
Place the chopped onions, carrots, celery, and diced potatoes in the slow cooker.
Add the garlic, dried thyme, rosemary, bay leaves, salt, and pepper.
Pour in the chicken broth. Stir gently to combine.
Step 4: Slow Cook
Cover and set the slow cooker to Low for 6-8 hours or High for 3-4 hours, depending on how much time you have.
During this time, the chicken will cook to perfection and the flavors will develop into a savory, intense base.
Step 5: Create the Creaminess
Once the chicken is cooked and the vegetables are tender, remove the chicken and shred it with two forks.
For a creamy consistency, use an immersion blender to puree 1-2 cups of broth and vegetables, or puree them in a regular blender and return them to the slow cooker. Alternatively, mix 2 tablespoons of flour with a little plant-based milk, then add it to the stew and cook for another 20-30 minutes, until thickened.
Step 6: Top with peas and corn.
Add the frozen peas and corn and cook for another 15 minutes.
Taste and season with salt, pepper, or herbs to taste.
Remove the bay leaf before serving.
🍲Preparation and Preparation
The secret to making this creamy chicken stew without cream is using potatoes and slow cooking. Potatoes break down during cooking, releasing starches that naturally thicken the broth. Puréeing part of the stew helps create a velvety texture without adding heavy cream or dairy.

By slowly cooking the chicken with vegetables and herbs, we allow the flavors to meld for hours, resulting in a rich and flavorful base, balanced and full-bodied. The final touch, blending or mashing, is what gives this stew its creamy and delicious texture.
