Step-by-step preparation
1. Prepare the potatoes:
Peel the potatoes and cut them into even cubes.
Soak them in cold water for about 15 minutes to remove the starch: this trick will make them crispier.
Drain and dry well with paper towels.
2. Blanch:
Bring a pot of salted water to a boil.
Blanch the potato cubes for 5–6 minutes.
Drain and let cool.
3. Seasoning:
In a bowl, combine the breadcrumbs, cornmeal, salt, pepper, and rosemary.
Add the potatoes and oil.
Toss well until each cube is evenly coated with the crunchy mixture.
4. Bake:
Arrange the potatoes on a baking sheet lined with parchment paper, well spaced apart.
Bake at 200°C for 35–40 minutes, turning them halfway through, until golden and crispy.
5. Serve.
Sprinkle with chopped fresh rosemary.
