Crispy chicken pieces with honey and garlic

To make the sauce:
Prepare the chicken: Cut the chicken into medium-sized pieces. Season with salt and pepper.
To make the breadcrumbs: Mix flour and cornstarch in a bowl. Dip the chicken pieces first in beaten egg, then in the flour mixture.
To fry the chicken: Heat oil in a pan or deep fryer. Fry the chicken pieces for 4 to 5 minutes, until golden brown and crispy. Drain on paper towels.
To make the sauce: In a clean pan over low heat, sauté the garlic in a little oil. Add honey, soy sauce, and vinegar. Simmer for 2 to 3 minutes, until the sauce thickens slightly.
To bread the chicken: Add the crispy chicken pieces to the pan and toss well with the sauce.
To serve: Sprinkle with sesame seeds and chopped chives. Serve hot with rice or stir-fried vegetables.
Tip for perfectly breaded chicken:
Pat the chicken dry before breading. This will make the breading extra crispy.
Don't overcrowd the pan: Fry the chicken in batches to keep it crispy.
Use runny honey: It blends better with the sauce.
Add the sauce just before serving to prevent the chicken from becoming soggy.
Serve immediately: It's crispiest right after frying.
Gourmet variation
: Chicken with honey and ginger.
