Oat and banana pancakes
To make the dough:
Mix the dry ingredients: Mix 2.5 cups of rolled oats and 1/4 teaspoon of baking soda in a bowl.
Add the yogurt: Add 2 tablespoons of yogurt to the dry ingredients and mix well. Stir in the remaining yogurt: Add another 2 tablespoons of yogurt and mix until smooth.
Add the eggs: Crack 2 eggs into a bowl and mix until smooth.
Mash the bananas: Mash 2 ripe bananas into a smooth mixture in a separate bowl.
Add the bananas: Add the mashed bananas to the oat mixture.
Add water: Add 100 ml of water and mix well until smooth.
Preparing the pancakes:
Heat the oil: Heat a small amount of oil in a non-stick pan over medium-high heat.
Pour the batter: Pour a small amount of batter into the pan to form the pancakes.
To fry until golden brown: Fry each pancake for about 2-3 minutes on each side, or until golden brown. Repeat: Repeat with the remaining batter, adding more oil to the pan if needed.
Serving suggestions
With fresh fruit: Garnish with fresh berries, sliced bananas or other fruit.
With syrup: Drizzle with maple syrup or honey for extra sweetness.
With peanut butter: Brush with almond or peanut butter for an extra serving of protein and flavor.
