Potato and Ham Gratin

Ingredients for 4 to 6 people

  • 1 kg of firm-fleshed potatoes (Charlotte, Nicola…), cut into 3-5 mm slices
  • 200 to 250 g of cooked or smoked ham, cut into pieces or strips
  • 1 finely chopped onion (optional)
  • 1 clove of minced garlic (optional)
  • 40g of unsalted butter
  • 40 g of wheat flour
  • 500 ml of whole milk
  • 100g of thick or liquid fresh cream
  • Fine salt, freshly ground pepper, grated nutmeg
  • 100 to 150 g of grated cheese (Gruyère, Comté, Emmental or Cheddar)
