- 1 kg of firm-fleshed potatoes (Charlotte, Nicola…), cut into 3-5 mm slices
- 200 to 250 g of cooked or smoked ham, cut into pieces or strips
- 1 finely chopped onion (optional)
- 1 clove of minced garlic (optional)
- 40g of unsalted butter
- 40 g of wheat flour
- 500 ml of whole milk
- 100g of thick or liquid fresh cream
- Fine salt, freshly ground pepper, grated nutmeg
- 100 to 150 g of grated cheese (Gruyère, Comté, Emmental or Cheddar)
