Ingredients:
2 pounds (about 900 g) Yukon Gold or Russet potatoes, peeled and cut into chunks
½ cup (1 stick / 115 g) unsalted butter
½ cup warm chicken or vegetable broth (or reserved potato water)
Salt, to taste
Freshly ground black pepper, to taste
Optional: 1–2 cloves roasted garlic or 1 teaspoon garlic powder
Optional: 1 tablespoon olive oil for extra silkiness

1. Cook the Potatoes
Place peeled, cut potatoes in a pot and cover with cold water.
Add a pinch of salt and bring to a boil.
Reduce heat and simmer for 15–20 minutes, until tender when pierced with a fork.
2. Drain and Reserve Liquid
Drain the potatoes, but reserve about ½ cup of the starchy cooking water.
Let the potatoes sit for 1–2 minutes to release excess moisture.
3. Mash the Potatoes
Return potatoes to the warm pot.
Add butter and begin mashing while it melts into the potatoes.
4. Add Broth Gradually
Pour in the warm broth (or potato water) a little at a time, mashing until creamy and smooth.
Adjust with more liquid if needed.
5. Season and Serve
Stir in salt, pepper, and any optional herbs or garlic.
Taste and adjust to perfection.
