Stuffed Pepper Soup Recipe
Ingredients:

1 lb ground beef (or ground turkey for a lighter version)

1 tbsp olive oil (optional, if beef is lean)

1 medium onion, diced

2-3 bell peppers, diced (mix red, green, yellow for color)

2-3 cloves garlic, minced
-
1 can (15 oz) tomato sauce
-
1 can (14.5 oz) diced tomatoes (with juices)
-
3 cups beef broth (or chicken broth)
-
1 tsp dried oregano
-
1 tsp dried basil
-
Salt & pepper, to taste

1 cup cooked white or brown rice (or add uncooked rice and simmer longer)
-
Optional: pinch of red pepper flakes for heat
