How ripe should bananas be? The riper, the better! Look for bananas with brown spots all over the peel, or even those where the peel is mostly brown. These overripe bananas are much sweeter and easier to mash, resulting in a softer, more tender texture. If your bananas aren't quite ripe yet, you can speed up the process by baking them in their peels at 150°C (300°F) for 15 to 20 minutes.
