Instructions:
Beat the eggs and sugar.
Using an electric mixer, beat the eggs and sugar until light and fluffy. This is the secret to a smooth batter.
Add the liquids:
Pour in the oil (or melted butter) and room temperature milk. Continue mixing until the mixture is smooth.
Incorporate the dry ingredients.
Add the sifted flour and baking powder, along with the grated lemon zest (or vanilla). Mix gently from the bottom up to prevent the dough from deflating.
Pour into the cake pan.
Butter and flour a 22-24 cm round cake pan. Pour in the batter and smooth the surface.
Bake in a preheated oven at 180°C (350°F) for about 35-40 minutes. Check for doneness with a toothpick: if it comes out clean, the cake is ready.
Decorate simply.
Once cooled, dust with powdered sugar. No complicated icing necessary: just a little is enough to bring out your inner child.
