Ingredients for candied orange peel:

  • Untreated orange peels (about 3 to 4 oranges)
  • Sugar (approximately 250g to prepare the syrup)
  • Water (approximately 250 ml for the syrup)
  • Dark chocolate  (100 to 150 g, optional, for coating the candied strips)

Verified process:

  1. After washing and peeling the bark into even strips, they are boiled to soften their bitterness. This step is essential to obtain a tender texture without an overly strong taste.
  2. Next, they are left to simmer gently in a homemade syrup until they become translucent and shiny.
  3. Once cooled, they firm up slightly on the surface, gain texture, and develop an absolutely irresistible citrus aroma. Those with a sweet tooth sometimes dip the slices in melted dark chocolate: a classic treat reminiscent of the windows of French chocolate shops.
